ในกระบวนการ Process กาแฟตั้งแต่ต้นทางไปจนสุดปลายทางคือผู้ดื่มนั้น กว่าที่จะทำให้ได้ตามมาตรฐานตามที่มันควรจะเป็น ต้องผ่านขั้นตอนที่ต้องใช้ทั้งความรู้ ความชำนาญและทักษะหลาย ๆ อย่างมากองรวมกันมากมาย เริ่มตั้งแต่ต้นทางคือการจัดการในสวนกาแฟ เช่น การคัดเลือกสายพันธุ์ในการปลูก การใส่ปุ๋ย การตัดแต่งต้นและการเก็บเกี่ยว มาจนถึงการ Process ในรูปแบบต่างๆ เพื่อให้เหมาะสมกับพื้นที่สภาพอากาศ และสายพันธุ์ เพื่อให้มีกาแฟสารเข้าสู่กระบวนการคั่วกาแฟ ซึ่งการคั่วกาแฟให้ได้ตามที่ต้องการนั้น ก็ต้องมีเทคนิคหรือสูตรการคั่วให้เป็นไปในทิศทางเดียวกับการ Process เป็นกาแฟสาร จนมาถึงการชงที่จะต้องเดินไปในทิศทางเดียวกันกับกาแฟที่คั่วมาจากโรงคั่ว มันถึงจะเป็นน้ำกาแฟที่ได้ชื่อว่าเป็นกาแฟที่มีคุณภาพดีหรือกาแฟพิเศษนั่นเอง ซึ่งทั้งหมดนี้ ต่างก็มีสายสัมพันธ์ต่อกันเป็นห่วงโซ่ ที่จะบกพร่องไปเสียอย่างใดอย่างหนึ่งไม่ได้เลย หากต้องการกาแฟที่ดีที่สุดให้กับผู้ดื่ม
ในฉบับที่ 45 เราเคยนำเสนอคอนเทนต์ที่ชื่อว่า “4 NEW GENERATION ตัวตนใหม่ของเกษตรกรไทย” ในฉบับนั้นเราพูดถึงความสุขของเกษตรกรชาวสวนกาแฟ ที่รักในการทำกาแฟ และผลิตกาแฟออกมาจากต้นทางได้อย่างมีคุณภาพ ทุกท่านต่างก็ล้วนประสบความสำเร็จในอาชีพได้เพราะความรักในการทำสวนกาแฟ 1 ในนั้นก็ยังมีชื่อติดรางวัลใน TOP 5 ของการประกวดสุดยอดกาแฟไทยในปีนี้ (2563) ด้วยเช่นกันจากต้นทางคือเกษตรกรแล้ว ลำดับต่อมาหากไม่นับอาชีพ Coffee Processor ซึ่งในบ้านเรายังหมายรวมไปกับอาชีพเกษตรกรทำสวนกาแฟอยู่แล้วว่าคือคนๆ เดียวกันก็คือ Coffee Roaster หรือคนคั่วกาแฟ อาชีพคนคั่วกาแฟมีความสำคัญไม่ยิ่งหย่อนไปกว่าทุก ๆ อาชีพในห่วงโซ่การผลิตกาแฟ โดยเฉพาะการที่จะคั่วให้กาแฟจากแต่ละแหล่งปลูกได้แสดงอิทธิฤทธิ์ด้านรสชาติของมันออกมาได้ชัดเจน เมื่อดื่มแล้วสามารถจินตนาการเป็นภาพของถิ่นที่มันจากมาได้เลย ซึ่งหากนักคั่วกาแฟคนไหนคั่วกาแฟได้แบบนั้น ถือได้ว่าประสบความสำเร็จในอาชีพกันเลยทีเดียว
ทักษะหรือเทคนิคของการทำงานด้านการคั่วกาแฟก็เหมือนกับอาชีพการปรุงอาหารหรือเชฟ เพราะแต่ละคนล้วนต่างก็มีเทคนิคและทักษะในแบบเฉพาะของแต่ละคน ซึ่งก็นับว่าเป็นความหลากหลายเฉกเช่นทักษะอาชีพอื่น ๆ และในความหลากหลายนั้นก็ย่อมส่งผลดี เพราะทำให้เกิดการพัฒนาต่อไปอย่างไม่หยุดนิ่ง
4 Coffee Roasters ในฉบับนี้ก็เช่นกัน แต่ละคนต่างมีบุคลิก ลักษณะการทำงาน ไลฟ์สไตล์และวิธีการทำงานที่แตกต่างกัน แต่ต้องการผลลัพธ์ไม่ต่างกัน คือการได้มาซึ่งกาแฟที่มีคุณภาพหรือกาแฟพิเศษเหมือนๆ กันนั่นเอง
There’s a lot of things going on and involved in processing such a good coffee from the beginning until serving to coffee drinkers. To make some quality coffee requires knowledge, skills, as well as some expertise regarding coffee. At the very first step, we can’t take the field management in a coffee farm for granted. For instance, we should delicately emphasize on the selection of coffee beans to plant, a coffee tree fertilizer, pruning coffee tree, and harvesting until being processed in various techniques. Moreover, it is quite important to properly manage those matters to be good with the land, weather condition, and selected coffee beans before it comes to the coffee roasting step. To get what you want about coffee roasting, you need to direct a technique or a formula the same way as you process coffee into a green bean. Likewise, you should take on brewing coffee
in the same route as the coffee roaster does from the factory. If you follow this guideline, you will get a good cup of coffee or a very special one. You can see that it is like a bond interconnected in form of chain and none of each one can be apart if you desire of the best coffee to serve.
In the previous issue 45, we introduced you the “4 New Generations of Thai Coffee Farmer.” We talked about how they were happy to be a coffee farmer getting a chance to do what they loved and to be able to make a good cup of coffee out of the origin. Everyone in the story was successful in their career thanks to the affection of coffee farming. One of them even got nominated to be a top 5 in “The Best Thai Coffee Contest 2020.”
Apart from the coffee farmer at the first station, a coffee processor will be the next but, in Thailand, a coffee farmer is also the coffee processor himself. Onwards, it is a coffee roaster’s turn. The coffee roaster is an important role in the coffee industry, especially making the best out of roasted coffee selected from a farm and serving magical and distinct tastes. One of the secrets of being a successful and well-known coffee roaster is when you can make a coffee drinker visualize or imagine a picture of the origin of that cup of coffee right after the first few sips.
Being a coffee roaster is like being a chef because of skills and techniques are highly required. Each roaster has different strengths and styles similar to other professions. However, it is safe to say that the more skillful and stylish roasters out there, the better and better cups of coffee in the café, infinitely.
The 4 coffee roasters herein have unique work styles and different personalities. But they have the same goal which is to make a good and special cup of coffee.
